Bún Chả

Grilled meat, vermicelli, herbs

Bún chả is Hanoi's lunch: meat grilled over charcoal, served with a bowl of cold rice vermicelli, a heap of fresh herbs and lettuce, and a bowl of nước chấm — the sweet, sour and salty dipping sauce that ties it together.

We serve it with beef (Bún Chả Bò), chicken (Bún Chả Gà), grilled shrimps (Bún Chả Tôm) or as a vegetarian bowl (Bún Chả Chay). You build each bite yourself: noodles, herbs, meat, a dip in the sauce.

It is light, fresh and filling at the same time, which is why it is one of the dishes guests mention most often.

Is bún chả served hot or cold?

The meat is grilled and hot; the vermicelli and herbs are served at room temperature. That contrast is the point of the dish.

What is the difference between bún chả and phở?

Phở is a noodle soup with broth. Bún chả has no broth: it is grilled meat with dry vermicelli and a dipping sauce.
